Doc’s Recipe: Sweet & Sour Meatball Footballs

¼ Lb. Butter (melted)

1.25 pound regular ground beef

1 cup panko bread crumbs

2 eggs, beaten

9 oz. cup whole milk

1 tbsp onion powder

1 tsp salt

1 tsp black pepper

1 tbsp Worcestershire sauce.

(Note: You can grill these on medium, and cook until temp is min. 130, then add to sauce in baking dish and finish in oven

Preheat oven to 350°F.

Combine every ingredient and mix with hands to combine. Using a 1-tablespoon scoop to portion, softly form in into footballs. Place in a 9×13 baking dish. Cover with sweet and sour sauce (recipe below, or your favourite jarred). Bake for 30-35 minutes.

Remove from oven, serve and enjoy!

Basic Sweet and Sour Sauce

4 cups

1/4-cup cornstarch

1/4-cup water

¼ cup brown sugar, packed

½ cup granulated sugar

¾ cups apple cider vinegar

6 oz. pineapple juice

4 ounces water

¼ cup brown sugar, packed

½ cup granulated sugar

¾ cups apple cider vinegar

½ cup ketchup

3 Tsp. soy sauce

In a small bowl whisk ¼ cup corn starch and ¼ cup water until combined. Set aside. In a medium saucepan, over medium high heat, combine remaining ingredients. Whisk to combine.  Bring sauce to a boil, cook for one minute.  Add cornstarch mixture and cook until thick and shiny, about 5 minutes. Remove from heat.   Set aside until ready to use.

Hint: Hold back approx. ¼ of the sauce, and pour over the footballs when they come out of the oven.
